Put oil in a pan, turn on low heat, add onions, ham, and tomatoes and stir-fry until the tomatoes are juiced.

Turn to medium heat, add shredded potatoes and stir-fry well to color, and flatten.
(There is ketchup at home to put some, the color is better) -
Pour in less than half of the water, sprinkle salt and black pepper to taste, cover the pot and simmer over medium heat for 10 minutes.

Beat in the eggs, then cover the pot and simmer until the water is dry.
