Soak the fresh chicken pieces in cold water and drain them for later use

Remove the chicken pieces from the pot (do not blanch the fresh chicken)

Turn on medium-low heat and slowly stir-fry the grease

Add ginger, garlic, rice wine, light soy sauce, oyster sauce, dark soy sauce, rock sugar and soybean paste

Add the soaked shiitake mushrooms

Stir-fry to color

Add boiling water (more than the chicken pieces)

Pour in the potatoes, add the lid and simmer to taste
