All the ingredients of the main dough of DAY1
, except for fresh yeast and butter, are stirred into a bowl with chopsticks to form a flocculent, and then kneaded into a dough by hand. -
Cover with plastic wrap and refrigerate overnight.

DAY2
Apple diced.
Melt the butter in a pan, add the diced apples and stir-fry until golden brown.
Cool completely! -
Add the brown sugar powder and Ceylon cinnamon powder and stir well.
Refrigerate and set aside. -
Add fresh yeast to the hydrated dough and knead until the yeast absorbs.
Add the softened butter at room temperature and knead out the film. -
Knead in 5 portions, cover with plastic wrap and relax for about 15 minutes.

Roll out into five equally large discs.
