The beef used in this photo shoot is SAM's Australian grain-fed cow lin. After the beef is washed and cut into sections, blanch in a pot under cold water, skim off the foam after boiling, add ginger slices and star anise cinnamon over medium heat and cook for 10 minutes, then cover the pot and cook over medium low heat for 5-8 minutes. Remove and let cool (it doesn't hurt if the beef is not cooked thoroughly).
The beef broth in the pot can be poured out after resting, and the broth can also be used for other purposes, cooking noodles and cooking a kimchi beef soup are all good, so I won't extend it here. -
The cooled beef is carefully cut into strips. The size depends on the individual knife work, I am more casual every time, it looks like almost half a little finger thick, I like big meat strips, I don't want to eat meat residue~

Put the amount of oil in the pan to cover the amount of the whole cut beef, and then put ginger, green onions, star anise, bay leaves, etc. into the oil pan and fry them over low heat, this step is to increase the flavor of the oil. Seeing that there is coriander at home, I also put coriander in it, and those who don't like it can ignore this ingredient. Pretty much the spices are fished out.
Then put in the cut beef, turn medium heat to low heat and stir-fry slowly, it is expected that the beef strips will turn slightly brown after 8-10 minutes, and more than half of the oil in the pan can be poured out. Then turn on the seasoning. -
When the beef is this color, export some oil and start seasoning. I will add some minced ginger and garlic to enhance the flavor, stir-fry for 3-5 minutes, and then pour in soy sauce and salt. The taste is small and many times, you can taste the taste and gradually increase the flavor to avoid salty taste.

Then add the dried chili peppers and cut them into shreds (usually processed with gloves and scissors), at this time continue to medium and low heat, pay attention to stirring. Then adjust it according to the taste, add an appropriate amount of sugar, salt and pepper powder, etc.

Finally, drizzle a little vinegar (very little) on the sides of the pan before removing from the pan, and add the finished sesame seeds to the pan. It tastes better when cooled.
