Garlic mix with tenderloin
The child likes to eat boiled pork slices very much, and after referring to and trying various recipes, he found that eating this way seems to be more convenient and flavorful than boiled meat slices, and his family is also very approving of them, so he must record it.

Ingredients
Cooking Instructions
-
Cut the tenderloin into 1-2mm slices.
-
Add an appropriate amount of baking soda to the sliced meat and grasp it well, it doesn't matter if you have more, marinate for more than 30 minutes. Children especially like the smooth texture of the sliced meat, so this step is quite important.
-
After 30 minutes, rinse the meat slices with water, rinse several times and drain the water.
-
Put the slightly drained meat slices in a basin, add a little cooking wine and white pepper and marinate for 15 minutes to remove the fishy smell.
-
Cut the red pepper into rings when marinating the meat slices, if you don't have it, you can replace it with dried chili powder, beat the garlic seeds into garlic puree, and cut the shallots into chopped green onions for later use.
-
Pour the prepared chili, garlic and chopped green onion into a large bowl.
-
Heat the oil and pour it over again.
-
Add 3 tablespoons of light soy sauce, 2 tablespoons of oyster sauce, 2 tablespoons of aged vinegar, 1 tablespoon of dark soy sauce or teriyaki soy sauce to the bowl, add a teaspoon of salt, and half a tablespoon of sugar to enhance freshness.
-
Stir all the seasonings to combine.
-
While preparing the seasoning, bring the water to a boil, pour the meat slices into the pot when the water is boiling, and use chopsticks to disperse without sticking.
-
After boiling the water again, boil for 3 minutes on medium heat, there will be a lot of foam, which can be skimmed off with a colander.
-
After 3 minutes, turn off the heat and skim off the foam, remove the meat slices and drain.
-
Pour the drained meat slices into the prepared seasoning bowl, stir well, and serve! Fresh and smooth, an absolute artifact for rice!
