Basic ingredient preparation: Rinse the tofu in hot water and wash off the excess oil.

Put the fried tofu in the pot, add water, soy sauce, mirin and sugar to boil, cover the pot, cook for about 10 minutes, turn off the heat and let it cool (you can also let it stand overnight for better flavor)

Put warm rice in a large bowl, pour the sushi vinegar into the rice, and mix well to make vinegared rice.

Drain the flavored fried tofu and stuff the vinegared rice into it, which accounts for 1/3 or 1/2.

The opening edge of the fried tofu skin is folded inward.
