Pour ginger, shallots, garlic, star anise, cinnamon, bay leaves, and shiitake mushrooms and stir-fry until fragrant. Then pour dark soy sauce, light soy sauce, salt, cooking wine and water, and hope that the meat is fatty but not greasy, you can add some rock sugar.
You can directly replace cooking wine and water with beer and soak the pig's trotters. -
