Beat into egg mixture

Add more oil to the pot first, and burn over medium heat until the oil is slightly smoking, during which you should shake the pot more to let the oil moisten the iron pot.

Pour off the excess oil and turn off the heat.

Add half of the egg mixture, then quickly turn the iron pan to form the egg skin. This step is similar to making egg dumpling wrappers.

Wait about 40 seconds for the egg skin to curdle, turn it over carefully, and then turn on low heat and bake again.
*When spreading out an egg skin, add 1 teaspoon of oilâ then shake the pot â the iron pot until it is just smokingâ turn off the heatâ pour in the egg mixtureâ turn the pot â turn over â low heat. Just repeat.
*Basically, one egg can be spread out with one egg skin. -
Another method is to add a little starch to the eggs and beat them into egg liquid, which can increase the toughness of the egg skin.

However, the starched egg skin should be baked for a little longer on low heat, and the egg skin can only be turned over when it is blistered. It takes longer to set than pure eggs.

1 serving of minced meat on the front leg, add an egg, and a handful of chopped green onions. 1 tablespoon each of oyster sauce and light soy sauce. Peanut oil and cooking wine are half a spoon each. 1/2 teaspoon sugar, 1 teaspoon salt. A little white pepper.
Then use your hands to grasp evenly. -
When you're ready to make egg rolls, it's convenient to have a small silicone spatula at home. If not, apply some oil to your hands and spread it with your hands.

The egg skin is coated with a layer of minced meat, about 5-7 mm thick, and the minced meat is one circle smaller than the egg skin.

Then roll it from the bottom up, and after the roll is done, the seal is placed downward.

Roll 3 strips and lay flat in a large plate.

Bring the water to a boil and place the egg rolls in the pot. Steam over medium heat for 15 minutes and simmer for 5 minutes.
