Steamed eggs always bring back fond memories of my childhood. My grandmother always cooked this dish for me, and whenever I put a spoonful of melt-in-your-mouth creamy custard in my mouth, I immediately went back to the happy and beautiful days when life was much more carefree. Whenever I crave something good to digest for breakfast, or when I'm not feeling well and want something warm and cozy, I steam eggs. You only need simple ingredients and you can enjoy it in less than 20 minutes. Steamed eggs with shrimp, simple and hearty. The shrimp makes the egg flavor sparkle and you'll love it. 2 eggs (100g), 1g salt, a pinch of black pepper, whisk well.
*The egg mixture needs to be weighed and is the key to a smooth curd.
* Wrench a little longer than usual. -
Add 150g of warm water and beat well.
*The ratio of egg wash to warm water is 1:1.5. -
Sift the egg mixture 1-2 times to remove the egg tendons, let it stand for 15 minutes, if there is floating residue, you can gently remove it. Pour into a bowl.
*Sifted egg wash is the key to a delicate taste.
*You can put a few shrimp in the bottom of the bowl. -
Boil water in a steamer, steam over medium-low heat for 10 minutes, until the surface is solidified, and put 3 shrimp in each bowl.
* Marinate the shrimp in advance with cooking wine, salt and pepper.
*You can add some peas and corn as a garnish. -
Steam on low heat for 3 minutes, then turn off the heat and simmer for a while.
