Temari Sushi (Japanese: 手まりsushi, Temari Sushi) is a traditional dish of the Japanese Hinamari Festival, named for its round shape that resembles a Japanese girl's toy Temari ball, and also means round and complete, also known as ball sushi or round sushi. The production of sushi has high requirements for rice, and this time I used a rice that I saw by chance and was attracted by its small and fresh jar - "a can of fresh rice", but I didn't expect the sushi to taste particularly good. This rice is the Wuchang Rice Flower Rice recommended by "Tip of the Tongue 2", and it is packed into a small jar within 8 hours after the rice is hulled, filled with nitrogen and sealed, preserving the freshest state and taste of the rice. The rice grains are as smooth as jade, the oil is bright and fragrant, the cooked rice is crystal clear, the taste is glutinous but not bad, and with appropriate tenacity, there is no need to wash by hand, it is really one of the best rice I have ever tasted, and it is worthy of the rice bred by the rich black soil of Northeast China. 1. Open a can of lightly nourished "one can of fresh rice" and pour it into the inner pot of the rice cooker.
Fresh rice that doesn't need to be washed retains nutrients and is also convenient for lazy people like me. -
Fill a can of mineral water or purified water in a rice can, pour it into the inner pot of the rice cooker, and start cooking the rice.
The rice jar used in the packaging has the function of measuring the amount of water, and the golden rice-water ratio of one can of rice and one can of water perfectly solves the problem that I have to cook several times to grasp the correct rice-water ratio every time I change different rice, which makes me particularly satisfied. -
While the rice is cooking, prepare the other ingredients for the Temari sushi.
A small piece of salmon and cherry radish are thinly sliced, the ham and cheese slices are pressed out with a flower mold, the okra is blanched and sliced, the cucumber is cut into thin strips with a paring knife, and a small plate of flying fish roe and seaweed is prepared. -
Add 20g of sugar and 10g of salt to 4.50ml of rice vinegar and make sushi vinegar for later use. Of course, ready-made sushi vinegar can also be used.

After the rice is cooked, stir it slightly with a rice spoon and pour in an appropriate amount of sushi vinegar according to personal taste, and stir well again.

Line a piece of plastic wrap on a cutting board and scoop a teaspoon of rice (about 50 grams) onto the plastic wrap. If you don't grasp the amount of this step, you can also replace the cutting board with an electronic scale to operate.

Lift the four corners of the plastic wrap and hold them above the rice to shape the rice into a ball.

One can of fresh rice and one can of water, and the cooked rice is just enough to make 9 spherical sushi of about 50 grams.

Place two slices of salmon on top of plastic wrap. (Note that the ingredients that come into contact with the plastic wrap side first, and then the top ones after making Temari sushi)

Remove the plastic wrap from the spherical rice balls and place them on top of the salmon.

Lift the four corners of the plastic wrap and form a circle as you did when you made a spherical rice ball.
